BBQ Tofu

 

I would recommend using at least 3 blocks of tofu if you are going to the trouble to use the long method. This method distributes the flavor more evenly throughout the tofu, but requires advance planning because you have to freeze the tofu first. To freeze the tofu, remove it from the package and drain all of the water. Put it in individual freezer bags to freeze and freeze it at least 48 hours so that it is frozen all the way through the block. The night before you plan to BBQ it, defrost the tofu (you can defrost the tofu in the refrigerator 24 hours ahead of time or with the defrost setting on the microwave). Squeeze as much water from the block as possible, trying to keep the block intact so you can slice it. Slice the pieces about 1/4 inch thick and place in marinade with the top and bottom covered for at least 3-4 hours or overnight.

 

Marinade:

You can use your favorite commercial marinade. I frequently start with a commercial marinade and add to it creamy peanut butter, other spices such as garlic, chili powder, etc. to customize it. After soaking the tofu in marinade, you can either bake it (see Baked BBQ Tofu Recipie) or grill it on a grill. If you are grilling, you can put it on oiled aluminum foil. First brown on one side and then turn it, put on BBQ sauce, brown the bottom side, flip and put BBQ sauce on again., cook for another short while and then enjoy it with a your favorite hamburger bun, or by itself.
